Scallops baked in their shells

Scallops baked in their shell with a crunchy herb and garlic crust.
Serves 2 - as a starter
Preparation - 15 minutes
Cook - 7 minutes
Ingredients
6 Scallops - in the half shell
2 -3 Garlic cloves - crushed and chopped
150g Butter
1 tbsp. tarragon - finely chopped
A small glass of white wine
A small handful of breadcrumbs
A small handful of parsley - finely chopped
Lemon wedges to serve
Method
1. Preheat the oven to its highest setting. Whizz the garlic, butter and parsley together in a food processor with a pinch of salt
2. Put the cleaned scallops in their half shell on a baking tray ( If they wobble a bit, just anchor them with a blob of mashed potatoe on the bottom )
3. Add a splash of wine and a scattering of salt to each shell. Sprinkle over the tarragon and drizzle with olive oil
4. Cover the scallops with breadcrumbs and put a knob of the garlic butter on top.
5. Bake in the oven for 6 -7 minutes, until the scallops are cooked and the breadcrumbs have formed a golden-brown crust. Serve with lemon wedges. Yumm!
