Roasted Cod on a bed of glazed balsamic carrots, beans and new potatoes
Beautifully complemented by the delicious balsamic glazed vegetables, this cod recipe both looks and tastes special.

Cook - 20 minutes
Ingredients
500g /1lb.2oz Cod fillets - skinned & boned
200g / 7oz Carrots - cut into batons
200g / 7oz French beans - topped & tailed
400g / 14oz New potatoes
30ml / 2 tbsp. Balsamic vinegar
60ml / 4 tbsp. olive oil
15ml / 1 tbsp. parsley - chopped
Method
1. Preheat oven 200*C / 400*F / Gas 6
2. Cook potatoes 20mins & drain
3. Place four portions of cod onto a lightly oiled roasting tin and cook 15 - 20 minutes
4. Cook carrots & beans 8 - 10 minutes - tender & drain
5. Place all vegetables in a heavy based frying pan with the olive oil and balsamic, heat gently and toss until glazed.
6. Serve with the glazed vegetables and a delicious piece of cod on top sprinkled with parsley
